Ingredients
10 oz bow tie pasta (285 g)
2 chicken breasts, chopped
2 tsp smoked paprika
1 tsp Italian seasoning
2 tsp salt, divided
2 tsp black pepper, divided
3 tbsp olive or vegetable oil (45 ml)
1 tsp chili powder
2 cups frozen corn (340 g)
1/2 cup grated Parmesan cheese (50 g)
1 cup heavy cream (240 ml)
8 bacon strips, cooked and chopped
Chopped parsley for garnish (optional)
Instructions
Cook pasta according to package directions until al dente. Drain and set aside.
In a bowl, season chicken with 1 tsp paprika, Italian seasoning, 1 tsp salt, and 1 tsp pepper.
In a large pan, heat 2 tbsp oil over medium-high heat. Sauté chicken until golden and cooked through. Remove and set aside.
In the same pan, add 1 tbsp oil. Cook corn with remaining spices: 1 tsp salt, 1 tsp pepper, 1 tsp paprika, and chili powder for 3 minutes.
Remove half the corn and set aside. Add cream to the pan, bring to a gentle boil, and stir in Parmesan until smooth.
Return pasta and chicken to the pan, toss to coat in sauce. Top with bacon and reserved corn. Garnish with parsley.
Notes
Add more cream or a spoon of cream cheese for extra richness.
Substitute with other short pasta like penne or fusilli.
Use rotisserie chicken or precooked bacon for quicker prep.
For dairy-free, swap cream and Parmesan with alternatives like coconut cream and nutritional yeast.
Canned corn can be used; drain well and reduce cooking time.
