- 1 large boneless skinless chicken breast
- Salt and black pepper to taste
- 2 teaspoons Italian seasoning
- 1/4 cup all-purpose flour
- 1–2 tablespoons olive oil
- 1/2 cup dry white wine
- 3 tablespoons butter
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 1 1/4 cups half and half
- 3/4 cup chicken broth
- 1/2 chicken bouillon cube
- 1/3 cup grated Parmesan cheese
- 1/3 cup grated Romano cheese
- 1/2 pound pasta, any variety
- 1 cup reserved pasta water (optional)
- 1 lemon (optional)
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon mustard powder
- 1/2 teaspoon dried parsley
- 1/8 teaspoon smoked paprika
Instructions
- Combine half and half, chicken broth, and dried seasonings and set aside
- Slice and pound chicken to even thickness, season, and lightly coat with flour
- Heat olive oil and sear chicken until golden, then rest and slice
- Boil salted water and cook pasta until al dente, reserving pasta water
- Deglaze skillet with white wine and reduce by half
- Add butter and garlic, then stir in flour to form a roux
- Slowly whisk in liquid mixture until smooth and thickened
- Stir in bouillon and simmer gently
- Gradually add cheeses and stir until melted
- Add pasta and chicken to sauce and toss to combine
- Adjust consistency with pasta water if needed
- Finish with lemon juice if desired and serve
Notes
- Freshly grated cheese melts best
- Do not rush adding liquids to the roux
- Pasta water helps loosen sauce when reheating leftovers
