Description

Creamy Chicken & Rice Casserole is an easy one-pan family dinner made with tender chicken breasts, Minute Rice, creamy soups, and onion soup mix. This comforting baked casserole is simple, hearty, and perfect for busy weeknights.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 cups Minute Rice, white or brown
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 soup can water
  • 1 envelope Lipton Onion Soup Mix
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 350°F.
  2. Generously grease a 9×13-inch baking dish with 1 tablespoon butter.
  3. In a medium bowl, combine the uncooked Minute Rice, cream of mushroom soup, cream of chicken soup, and one soup can of water.
  4. Pour the rice mixture evenly into the prepared baking dish.
  5. Place the chicken breasts on top of the rice mixture.
  6. Sprinkle the onion soup mix evenly over the chicken.
  7. Cover the baking dish tightly with aluminum foil.
  8. Bake for 1 hour to 1 hour 30 minutes, or until the chicken reaches 165°F and the rice is fully cooked.
  9. Remove from the oven and let the casserole rest for 5 minutes before serving.
  10. Slice the chicken into portions or dice it and stir it into the creamy rice before serving.

Notes

  1. Use Minute Rice for best results because regular rice takes longer to cook.
  2. If using regular rice, partially cook it before adding it to the casserole.
  3. Do not remove the foil while baking because the trapped steam helps cook the rice.
  4. Chicken breast size may affect cooking time, so check that the internal temperature reaches 165°F.
  5. Serve with broccoli, green beans, salad, or any seasonal vegetable.
