- 1 1/2 pounds boneless skinless chicken breasts
- 2 cups Minute Rice, white or brown
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 soup can water
- 1 envelope Lipton Onion Soup Mix
- 1 tablespoon butter
Instructions
- Preheat oven to 350°F.
- Generously grease a 9×13-inch baking dish with 1 tablespoon butter.
- In a medium bowl, combine the uncooked Minute Rice, cream of mushroom soup, cream of chicken soup, and one soup can of water.
- Pour the rice mixture evenly into the prepared baking dish.
- Place the chicken breasts on top of the rice mixture.
- Sprinkle the onion soup mix evenly over the chicken.
- Cover the baking dish tightly with aluminum foil.
- Bake for 1 hour to 1 hour 30 minutes, or until the chicken reaches 165°F and the rice is fully cooked.
- Remove from the oven and let the casserole rest for 5 minutes before serving.
- Slice the chicken into portions or dice it and stir it into the creamy rice before serving.
Notes
- Use Minute Rice for best results because regular rice takes longer to cook.
- If using regular rice, partially cook it before adding it to the casserole.
- Do not remove the foil while baking because the trapped steam helps cook the rice.
- Chicken breast size may affect cooking time, so check that the internal temperature reaches 165°F.
- Serve with broccoli, green beans, salad, or any seasonal vegetable.
