Description

Ingredients

  • 500g (1 lb) chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 200g (7 oz) mushrooms, sliced
  • 1 tsp paprika
  • 1 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 250ml (1 cup) chicken broth
  • 120ml (½ cup) heavy cream
  • 120ml (½ cup) sour cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

1️⃣ Prepare the Chicken: Season the chicken pieces with salt and pepper. Heat olive oil or butter in a large pan over medium-high heat. Cook the chicken until golden brown, about 5-7 minutes. Remove and set aside.

2️⃣ Sauté the Aromatics: In the same pan, add a bit more butter if needed. Sauté onions until soft (2-3 minutes), then add garlic and cook for another minute.

3️⃣ Cook the Mushrooms: Add the sliced mushrooms and cook until they soften and release their moisture (about 5 minutes).

4️⃣ Make the Sauce: Stir in paprika, Dijon mustard, Worcestershire sauce, and chicken broth. Simmer for 3-4 minutes, letting the flavors meld.

5️⃣ Add the Creamy Touch: Reduce heat to low, then stir in the heavy cream and sour cream. Mix well until smooth.

6️⃣ Combine and Simmer: Return the chicken to the pan, stir to coat, and let it simmer for another 5-7 minutes until the sauce thickens. Adjust seasoning as needed.

7️⃣ Serve: Garnish with fresh parsley and serve over egg noodles, rice, or mashed potatoes. Enjoy!

1️⃣ Avoid Overcooking the Chicken: Chicken breasts can dry out quickly, so cook them just until golden brown. If using thighs, they’ll stay juicier even with extra cooking time.
