Ingredients
Scale
- 12 oz spaghetti or linguine
- 3 cups cooked, shredded chicken (rotisserie or leftover works well)
- 1 cup mushrooms, sliced
- 3 tbsp butter
- 2 tbsp all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (optional, for topping)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the Pasta: Boil spaghetti in salted water until al dente. Drain and set aside.
- Prepare the Chicken: Use cooked shredded chicken or sauté fresh chicken breasts and shred.
- Sauté Mushrooms: In a large skillet, melt 1 tablespoon of butter over medium heat. Add mushrooms, cook until softened and golden, about 5 minutes. Remove and set aside.
- Make the Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Stir in flour to make a roux, cooking for 1-2 minutes. Gradually whisk in chicken broth, followed by heavy cream, and simmer until thickened. Season with salt and pepper to taste.
- Combine Ingredients: Mix cooked pasta, chicken, mushrooms, and half the Parmesan cheese into the sauce. Stir until evenly coated.
- Assemble: Transfer the mixture to a greased baking dish. Top with remaining Parmesan cheese and breadcrumbs, if desired.
- Bake: Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the top is golden and bubbly.
- Serve: Garnish with fresh parsley and serve warm.
Notes
- Choose the Right Pasta: Spaghetti or linguine works best, but you can also use fettuccine or penne if you prefer. Cook the pasta al dente to avoid it becoming mushy during baking.
- Balance the Sauce: Ensure your sauce isn’t too thick or too runny. Gradually whisk in the liquid while making the sauce, and adjust the consistency to your liking by adding a bit more broth or cream as needed.
- Customize the Topping: Add a layer of breadcrumbs mixed with melted butter for extra crunch or stick to more Parmesan for a gooey, cheesy crust.
