Ingredients
-
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
-
1 lb potato gnocchi (fresh or store-bought)
-
4 cloves garlic, minced
-
1 cup heavy cream (or dairy-free substitute)
-
½ cup chicken broth (or vegetable broth)
-
½ cup grated Parmesan cheese
-
2 tbsp olive oil or unsalted butter
-
1 tsp Italian seasoning
-
1 cup spinach or kale (optional)
-
Salt and pepper, to taste
-
Red pepper flakes (optional, for heat)
Instructions
-
Heat 1 tbsp olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook 6–7 minutes until golden and fully cooked. Remove and set aside.
-
Add remaining oil to the skillet and sauté gnocchi 3–4 minutes until golden. Set aside with chicken.
-
In the same skillet, sauté garlic for 1–2 minutes. Deglaze with broth, scraping browned bits. Stir in cream and Parmesan, simmering 2–3 minutes until slightly thickened.
-
Return chicken and gnocchi to the skillet. Add spinach or kale if using. Cook 2–3 minutes until heated through and well-coated.
-
Adjust seasoning and serve hot with extra Parmesan.
Notes
Gnocchi absorbs sauce quickly—add extra broth or cream if needed.
For a lighter sauce, swap half the cream with milk.
Double the garlic if you love bold flavor.
Customize with mushrooms, cherry tomatoes, or roasted peppers.
Best enjoyed fresh—gnocchi may soften if frozen.
