Description

Creamy Lasagna Soup combines seasoned beef, tender pasta, marinara, ricotta, and mozzarella in a rich, comforting one-pot dinner ready in 45 minutes.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (24-ounce) jar marinara sauce
  • 4 cups low-sodium chicken broth or beef broth
  • 1 (15-ounce) can crushed tomatoes
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped
  • Extra Parmesan cheese for topping

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the ground beef or turkey and drain excess fat.
  2. Add diced onion and cook until translucent. Stir in minced garlic and cook until fragrant.
  3. Stir in Italian seasoning, crushed red pepper, salt, and black pepper. Add marinara sauce, broth, and crushed tomatoes. Bring to a gentle boil.
  4. Reduce heat and simmer for 15 to 20 minutes.
  5. Add broken lasagna noodles and cook until tender, stirring occasionally.
  6. Lower heat and stir in heavy cream, ricotta, mozzarella, and Parmesan until melted and creamy.
  7. Serve hot and garnish with fresh herbs and extra Parmesan.

Notes

  1. Do not overcook the noodles as they continue to soften in the broth.
  2. Use a high-quality marinara sauce for the best flavor.
  3. Substitute half-and-half for a lighter option.
  4. Add spinach or mushrooms for extra vegetables.
  5. Store in the refrigerator up to 4 days and reheat with extra broth.
