Description

Creamy Parmesan Baked Zucchini is a rich, cheesy baked zucchini dish made with garlic cream sauce, parmesan, mozzarella, and tender zucchini slices.


Ingredients

  • 2 pounds zucchini, sliced into 1/4-inch rounds
  • Salt, for drawing moisture from the zucchini
  • 2 tablespoons butter, cut into small cubes
  • 3 cloves garlic, finely minced
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup grated parmesan cheese, divided
  • 1 cup shredded mozzarella cheese, divided

Instructions

  1. Preheat the oven to 425°F and butter a medium baking dish.
  2. Slice the zucchini into 1/4-inch rounds and sprinkle the slices lightly with salt.
  3. Let the zucchini rest for 15 minutes so the salt can draw out excess moisture.
  4. Blot each zucchini slice with paper towels to remove moisture and extra salt.
  5. Arrange the zucchini slices in the prepared baking dish.
  6. Whisk the heavy cream, sour cream, Italian seasoning, onion powder, salt, black pepper, and 1/2 cup parmesan cheese in a mixing bowl.
  7. Melt the butter in a saucepan over medium heat, then add the garlic and cook for 20 seconds.
  8. Add the cream mixture to the saucepan and whisk until it begins to bubble gently.
  9. Stir in 1/2 cup mozzarella cheese and cook for about 20 seconds, or until melted.
  10. Pour the cream sauce over the zucchini and gently shake the baking dish to distribute the sauce.
  11. Sprinkle the remaining parmesan and mozzarella over the top.
  12. Bake for 18 to 22 minutes, or until the top turns golden brown and bubbly.
  13. Remove from the oven and let the dish rest for 5 to 10 minutes before serving.

Notes

  1. Do not skip salting and blotting the zucchini because this helps prevent a watery sauce.
  2. Use freshly grated parmesan for the best flavor and smoother melting.
  3. Let the dish rest before serving so the cream sauce can thicken slightly.
