- 2 pounds zucchini, sliced into 1/4-inch rounds
- Salt, for drawing moisture from the zucchini
- 2 tablespoons butter, cut into small cubes
- 3 cloves garlic, finely minced
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup grated parmesan cheese, divided
- 1 cup shredded mozzarella cheese, divided
Instructions
- Preheat the oven to 425°F and butter a medium baking dish.
- Slice the zucchini into 1/4-inch rounds and sprinkle the slices lightly with salt.
- Let the zucchini rest for 15 minutes so the salt can draw out excess moisture.
- Blot each zucchini slice with paper towels to remove moisture and extra salt.
- Arrange the zucchini slices in the prepared baking dish.
- Whisk the heavy cream, sour cream, Italian seasoning, onion powder, salt, black pepper, and 1/2 cup parmesan cheese in a mixing bowl.
- Melt the butter in a saucepan over medium heat, then add the garlic and cook for 20 seconds.
- Add the cream mixture to the saucepan and whisk until it begins to bubble gently.
- Stir in 1/2 cup mozzarella cheese and cook for about 20 seconds, or until melted.
- Pour the cream sauce over the zucchini and gently shake the baking dish to distribute the sauce.
- Sprinkle the remaining parmesan and mozzarella over the top.
- Bake for 18 to 22 minutes, or until the top turns golden brown and bubbly.
- Remove from the oven and let the dish rest for 5 to 10 minutes before serving.
Notes
- Do not skip salting and blotting the zucchini because this helps prevent a watery sauce.
- Use freshly grated parmesan for the best flavor and smoother melting.
- Let the dish rest before serving so the cream sauce can thicken slightly.
