Description

Creamy rhubarb overnight oats with chia seeds and yogurt create a healthy, make-ahead breakfast with a tangy twist.


Ingredients

Scale
  • ½ cup rolled oats
  • ½ cup Greek yogurt or milk kefir
  • ½ cup milk
  • 1 tablespoon chia seeds
  • 2 teaspoons maple syrup
  • ½ cup rhubarb compote
  • Fresh strawberries
  • 4 cups rhubarb
  • ⅓ cup water or orange juice
  • ¼ cup maple syrup or honey
  • ½ cup strawberries

Instructions

  1. Chop rhubarb and prepare ingredients
  2. Simmer rhubarb with water and maple syrup for 10–15 minutes
  3. Mash or blend and add strawberries
  4. Divide oats into jars
  5. Add yogurt, milk, chia seeds, and compote
  6. Stir well and top with remaining compote
  7. Refrigerate overnight
  8. Serve with fresh strawberries

Notes

  1. Refrigerate at least 4 hours before eating
  2. Stir before serving if needed
  3. Add granola for crunch
