Ingredients
5 pounds Yukon gold potatoes
2 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon all purpose flour
1 cup heavy cream
½ cup Parmesan cheese
1 teaspoon fresh thyme
½ teaspoon kosher salt
½ teaspoon black pepper
Instructions
Preheat oven to 400°F and grease ceramic baking dish.
Slice potatoes thinly using a mandolin.
Melt butter and sauté garlic, then whisk in flour to form a roux.
Add cream and whisk until thickened.
Stir in Parmesan, thyme, salt, and pepper.
Toss potatoes in sauce and arrange upright in dish.
Cover with foil; bake 30 minutes, then uncover for 30 minutes more.
Rest 10 minutes before serving.
Notes
Store covered in the refrigerator up to 4 days.
Reheat at 350°F until warm.
