Description

Creamy Smothered Chicken and Rice is a comforting one-pot meal that combines tender chicken, a rich and creamy sauce, and fluffy rice. It’s the perfect dish for family dinners, special occasions, or weeknight meals, offering a satisfying combination of creamy textures and savory flavors.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs

  • 1 cup long-grain white rice

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup chicken broth

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • Salt and pepper, to taste

  • 1 tablespoon olive oil (for searing chicken)

Optional Add-ins:

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1/4 cup chopped green onions

  • 1 cup mushrooms or bell peppers, chopped


Instructions

  • Season and Sear the Chicken:

    • Season chicken with garlic powder, onion powder, paprika, salt, and pepper.

    • Heat oil in a large pan over medium heat.

    • Cook chicken for 5-6 minutes on each side until golden brown. Remove from pan and set aside.

  • Prepare the Creamy Sauce:

    • In a separate bowl, mix cream of chicken soup and chicken broth.

    • Stir in additional seasonings (garlic powder, onion powder, paprika, salt, pepper).

  • Assemble the Dish:

    • Add rice evenly around the chicken in the pan.

    • Pour creamy mixture over the chicken and rice. Add more broth if needed to cover the rice.

    • Cover with a lid.

  • Bake to Perfection:

    • Preheat the oven to 350°F (175°C).

    • Bake for 30-40 minutes, checking rice for softness after 30 minutes.

    • Uncover for the last 10 minutes if you want a crispy top.

Notes

For extra flavor, use bone-in chicken. The bones infuse the chicken with a richer taste.

If using brown rice, add more liquid and adjust the cooking time.

Optional ingredients like cheese and vegetables can add extra texture and flavor.

If the rice isn’t soft enough after baking, add more broth and bake longer.
