Description

Crispy pan-fried gnocchi cooked with spinach and finished with creamy feta for a fast, comforting vegetarian dinner.


Ingredients

  • 2 tablespoons olive oil
  • 4 cups fresh spinach
  • 4 ounces feta cheese, crumbled
  • 2 cloves garlic, minced

  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Boil gnocchi in salted water until they float, then drain well.
  2. Heat olive oil in a large pan and add gnocchi, cooking until golden and crisp.
  3. Turn gnocchi to crisp all sides.
  4. Lower heat and add garlic, cooking briefly.
  5. Add spinach and cook until wilted.
  6. Season with salt, pepper, and red pepper flakes.
  7. Remove from heat and stir in feta.
  8. Serve immediately.

Notes

  1. Add cherry tomatoes or bell peppers for variety.
  2. Use a wide pan for crispier gnocchi.
