- 1 medium onion diced
- 2 cloves garlic minced
- 3 tablespoons taco seasoning
- 1 large red bell pepper diced
- 15 ounce can corn drained
- 15 ounce can black beans drained and rinsed
- 15 ounce can diced fire roasted tomatoes with chiles
- 4 cups low sodium chicken broth
- 8 ounces cream cheese softened
- Sea salt to taste
- Black pepper to taste
Instructions
- Prep and measure all ingredients.
- Brown the ground beef in a large pot over medium high heat.
- Add onion and garlic and cook until translucent.
- Stir in taco seasoning, bell pepper, corn, black beans, tomatoes, and broth.
- Bring to a boil then reduce to a simmer for 10 minutes.
- Add softened cream cheese in pieces and stir until smooth.
- Season with salt and pepper and serve with desired toppings.
