Description

Creamy Tomato Chicken made with juicy chicken, cherry tomatoes, garlic, and Parmesan cream sauce in one skillet.


Ingredients

  • 2 large boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning
  • 1/3 cup flour
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 chicken bouillon cube
  • 1 teaspoon honey
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon mustard powder
  • 1/2 cup dry white wine
  • 3 tablespoons butter
  • 3 cloves garlic minced
  • 2 tablespoons flour
  • 2 tablespoons tomato paste
  • 1/2 cup half and half
  • 1 tablespoon cream cheese
  • 1/2 cup Parmesan cheese freshly grated
  • 2 cups cherry tomatoes halved or quartered
  • Fresh parsley or basil for garnish

Instructions

  1. Slice the chicken breasts lengthwise and pound to 1/2-inch thickness.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Dredge chicken lightly in flour.
  4. Heat olive oil in a skillet and sear chicken for 4 to 5 minutes per side.
  5. Remove chicken and set aside.
  6. Add white wine to the skillet and reduce by half.
  7. Melt butter and cook garlic for 2 minutes.
  8. Stir in flour and tomato paste.
  9. Slowly add the broth mixture while stirring continuously.
  10. Reduce heat and stir in half and half, cream cheese, and Parmesan.
  11. Add cherry tomatoes and return chicken to the skillet.
  12. Spoon sauce over the chicken and simmer for 5 minutes.
  13. Garnish with parsley or basil before serving.

Notes

  1. Use freshly grated Parmesan for a smoother sauce.
  2. Keep heat low when adding dairy to prevent separation.
  3. Serve with pasta, rice, or crusty bread for a complete meal.
