Description
A creamy tomato sauce vegan gluten free recipe made with hidden veggies for a rich, comforting meal.
Ingredients
¼ cup extra virgin olive oil
½ medium yellow onion, finely diced
2 bell peppers, diced
3 stalks of celery, diced
4–5 large carrots, diced
4 cloves of garlic, minced
1 tbsp Italian seasonings
½ tsp sea salt
¼ tsp black pepper
¼ tsp red pepper flakes
3 tbsp tomato paste
½ cup dry red wine (optional)
2 (28 oz) cans whole peeled tomatoes and their juices
Optional Vegan Parmesan:
1/4 cup raw cashews
2 tbsp hemp seeds
1.5 tbsp nutritional yeast
1/2 tsp sea salt
1/8 tsp garlic powder
Instructions
1. Heat a large pan with olive oil. Add onion, peppers, celery, carrots, and garlic.
2. Stir in Italian seasonings, salt, pepper, and red pepper flakes. Cook 10–12 minutes until soft.
3. Add tomato paste and cook 3 minutes.
4. Pour in red wine and simmer 3–4 minutes.
5. Add canned tomatoes and simmer 40 minutes.
6. Blend sauce until creamy. Return to pan.
7. Prepare vegan parmesan by pulsing cashews, hemp seeds, nutritional yeast, and garlic powder.
8. Toss sauce with gluten-free pasta or veggies. Serve hot with vegan parmesan.
Notes
This sauce freezes well for up to 3 months. Perfect for gluten-free or vegan diets.
