Description

  • 1 loaf brioche or challah, sliced (about 1-inch / 2.5 cm thick)
  • 4 large eggs
  • 1 cup (240 ml) heavy cream
  • ½ cup (100 g) granulated sugar
  • 1 tbsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp butter (for cooking)
  • ½ cup (100 g) brown sugar (for caramelized topping)

Instructions

  • Prepare the Custard: In a large bowl, whisk together eggs, heavy cream, granulated sugar, vanilla extract, and salt until smooth.
  • Soak the Bread: Dip each slice of brioche into the custard mixture, letting it soak for 10-15 seconds per side.
  • Cook the Toast: Heat a non-stick skillet over medium heat and melt 1 tbsp butter. Cook each soaked slice for about 3-4 minutes per side until golden brown. Repeat with remaining slices, adding more butter as needed.
  • Caramelize the Sugar: Sprinkle a generous layer of brown sugar on top of each toast slice. Use a kitchen torch to melt and caramelize the sugar until golden and crisp. If you don’t have a torch, place the toast under a broiler for 1-2 minutes, watching closely to prevent burning.
  • Serve & Enjoy: Serve warm with fresh fruit, a dusting of powdered sugar, or a drizzle of maple syrup for extra decadence!

Notes

1️⃣ Use the Right Bread: Brioche or challah works best because they are soft, rich, and absorb the custard without falling apart. Avoid thin or pre-sliced bread for the best texture.

2️⃣ Caramelizing the Sugar: A kitchen torch gives the best crispy sugar topping, but if you don’t have one, use your oven’s broiler. Just watch closely to prevent burning!

3️⃣ Don’t Over-Soak the Bread: Let the bread absorb the custard, but not too much! Over-soaking can make it too soggy and difficult to cook evenly. Aim for 10-15 seconds per slice.
