Description

This Crunchy Cucumber Apple Salad is a refreshing, colorful mix of crisp cucumbers, sweet apples, red onion, fresh herbs, and nuts, all tossed in a light honey-lemon dressing. It’s the perfect gluten-free and vegetarian side or light lunch for warm days—cool, tangy, and bursting with texture in every bite.


Ingredients

  • 2 cucumbers, thinly sliced (approx. 500 g)

  • 2 apples, thinly sliced (Honeycrisp or Granny Smith, approx. 300350 g)

  • 60 ml (1/4 cup) red onion, thinly sliced

  • 15 g (1/4 cup) chopped fresh parsley

  • 30 g (1/4 cup) chopped walnuts or almonds

  • 30 g (1/4 cup) crumbled feta cheese (optional)

  • 30 ml (2 tablespoons) olive oil

  • 15 ml (1 tablespoon) lemon juice

  • 15 ml (1 tablespoon) honey

  • Salt and pepper to taste


Instructions

  1. Wash and thinly slice cucumbers and apples. Add lemon juice to apple slices to prevent browning.

  2. In a small bowl, whisk together olive oil, lemon juice, and honey to make the dressing.

  3. In a large bowl, combine cucumbers, apples, red onion, parsley, and chopped nuts.

  4. Drizzle dressing over the salad and toss gently to coat.

  5. Season with salt and pepper to taste.

  6. Top with crumbled feta if using.

  7. Chill for 30 minutes before serving for best flavor.

Notes

Use crisp apple varieties like Honeycrisp or Granny Smith.

Toast the nuts for extra flavor.

Make it vegan by omitting feta and replacing honey with maple syrup.

Add quinoa or chickpeas to make it more filling.
