Description

Fresh and zesty cucumber salsa with tomatoes, jalapeno, cilantro, and a creamy citrus dressing. Perfect as a light appetizer or summer side dish.


Ingredients

  • 2 cups finely peeled, seeded, and chopped cucumbers
  • 1/2 cup finely chopped and seeded tomatoes
  • 1/4 cup chopped red onion
  • 2 tablespoons minced fresh parsley
  • 1 medium jalapeno pepper, seeded and chopped
  • 4 1/2 teaspoons minced fresh cilantro
  • 1 clove garlic, minced or pressed
  • 1/4 cup reduced-fat sour cream
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon seasoned salt
  • Tortilla chips for serving

Instructions

  1. Combine cucumbers, tomatoes, red onion, parsley, jalapeno, cilantro, and garlic in a bowl.
  2. In another bowl whisk together sour cream, lemon juice, lime juice, cumin, and seasoned salt.
  3. Pour dressing over cucumber mixture and stir well.
  4. Chill for 15 minutes before serving.
  5. Serve with tortilla chips.

Notes

  1. Seed cucumbers to prevent excess moisture.
  2. Use fresh citrus juice for best flavor.
  3. Serve the same day for maximum crispness.
