Ingredients
1 lb chicken breasts or chicken tenders (≈450 g), cut into 1-inch strips if needed
2 large eggs (≈100 g), beaten
1 cup panko or regular breadcrumbs (100 g)
½ cup grated Parmesan cheese (50 g), optional
1 tsp garlic powder (3 g)
1 tsp paprika (3 g)
½ tsp onion powder (1.5 g)
½ tsp salt (3 g)
¼ tsp black pepper (1 g)
Olive oil spray, for coating
Instructions
Cut chicken into 1-inch strips if not using tenders.
Prepare breading station: eggs in one bowl; breadcrumbs, Parmesan, and spices in another.
Season chicken lightly with salt and pepper.
Dip each piece into egg, then breadcrumb mixture. Press to coat. Double-coat for extra crunch.
Place on a parchment- or silicone-lined baking sheet (wire rack optional). Spray lightly with olive oil.
Bake at 400 °F (200 °C) for 20–25 minutes, flipping halfway, until golden and internal temp reaches 165 °F (74 °C).
Rest 3–5 minutes. Serve warm with dipping sauces.
