Description

Air Fryer Squash is the ultimate quick-and-easy side dish that turns simple summer squash into golden, crispy rounds bursting with garlic and herbs. With minimal oil and a handful of pantry spices, this recipe creates a healthy, low-carb, gluten-free dish in under 15 minutes. Perfect for busy weeknights or adding flair to any meal.


Ingredients

  • 2 medium summer squash (about 1 lb / 500 g)

  • 1 tbsp olive oil (optional)

  • 1 tsp granulated garlic

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • Salt, to taste

  • Fresh cracked pepper, to taste

  • Optional: vegan parmesan, fresh chopped herbs for garnish


Instructions

  1. Preheat air fryer to 450°F (240°C), or its highest setting.

  2. Wash squash, trim ends, and slice into ¼ to ½ inch thick rounds.

  3. Toss squash slices with olive oil (if using), garlic, basil, oregano, salt, and pepper.

  4. Place in a single layer in the air fryer basket. Do not overcrowd.

  5. Cook for 12–14 minutes, shaking the basket halfway through.

  6. Transfer to a plate, garnish with herbs or vegan parmesan, and serve immediately.

Notes

Avoid crowding for best crisp results—work in batches if needed.

Skip the oil to make it completely oil-free; squash still caramelizes nicely.

Add red pepper flakes or lemon zest for extra flavor.

Store leftovers in the fridge for up to 3 days and reheat in air fryer.
