Description

A simple, no-bake dessert made with marshmallows, butter, and crispy rice cereal. These sweet, chewy, and crunchy treats are easy to make and perfect for any occasion.


Ingredients

Scale
  • 4 cups mini marshmallows
  • 3 cups crispy rice cereal
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract (optional)
  • ½ cup chocolate chips or sprinkles (optional)

Instructions

  • Melt the Butter and Marshmallows:

    • In a large saucepan, melt butter over low heat.
    • Add marshmallows and stir continuously until fully melted.
    • Remove from heat and mix in vanilla extract if using.
  • Combine with Cereal:

    • Add crispy rice cereal to the melted marshmallow mixture.
    • Stir quickly but gently to coat all the cereal evenly.
  • Add Optional Mix-Ins:

    • Fold in chocolate chips, sprinkles, or other add-ins.
    • Stir gently to distribute without melting mix-ins too much.
  • Shape and Set:

    • Transfer the mixture to a greased 8×8-inch baking dish.
    • Use a buttered spatula or wax paper to press it down lightly.
    • Let cool at room temperature for 30 minutes.
  • Cut and Serve:

    • Once set, cut into bite-sized squares.
    • Store in an airtight container for up to 3 days.

Notes

  • Melt Marshmallows on Low Heat – High heat can cause the marshmallows to overcook, making the mixture hard and difficult to mix. Stir constantly over low heat for a smooth, gooey texture.

  • Do Not Overpack the Mixture – Pressing the mixture too firmly into the pan can make the treats too dense and hard. Lightly press with a buttered spatula or wax paper to keep them soft and chewy.

  • Store Properly to Maintain Freshness – Keep the treats in an airtight container at room temperature for up to 3 days. For longer storage, freeze them individually in wax paper and a sealed bag for up to 6 weeks.
