Description

This crock pot beef stew is a rich, cozy one-pot meal loaded with tender beef, potatoes, and carrots that slow cooks all day for an easy family dinner.


Ingredients

  • 2 packages (1 ounce each) dry onion soup mix
  • 1/2 teaspoon paprika
  • 2 pounds beef stew meat or boneless beef roast, cut in 1-inch pieces
  • 5 medium potatoes, peeled and diced
  • 2 to 3 cups baby carrots
  • 1 small yellow onion, chopped
  • 2 cans (10 ounces each) cream of celery soup
  • 1 cup ketchup (or tomato sauce)

Instructions

  1. In a large plastic bag, combine the dry onion soup mix and paprika.
  2. Add the beef pieces, seal the bag, and shake until the meat is well coated.
  3. Spread the coated beef evenly into a greased 7-quart crock pot.
  4. Top the meat with the diced potatoes, baby carrots, and chopped onion.
  5. In a small bowl, stir together the cream of celery soup and ketchup until smooth.
  6. Pour the soup mixture evenly over the meat and vegetables.
  7. Cover and cook on LOW for 7 to 8 hours, until the beef is tender and the vegetables are soft.
  8. Stir the stew to combine everything and serve hot.

Notes

  1. You can substitute tomato sauce for ketchup if you prefer a less sweet flavor.
  2. Prep the meat and vegetables the night before and store them in the refrigerator to save time in the morning.
  3. Adjust the thickness by adding a small splash of broth or water if the stew becomes too thick.
  4. Serve with crusty bread, biscuits, or a simple green salad for a complete meal.
