Description
Crock Pot Cajun Chicken Pasta combines tender shredded chicken and penne with a rich Parmesan cream sauce and warm Cajun seasoning. This easy slow cooker dinner makes eight satisfying servings with only ten minutes of preparation.
Ingredients
Scale
- 2 pounds boneless, skinless chicken breasts
- 2 cups heavy whipping cream
- 4 cups chicken broth
- 4 tablespoons butter
- 2 tablespoons Cajun seasoning
- 1/2 teaspoon garlic powder
- 1 pound uncooked penne pasta
- 1 cup grated Parmesan cheese
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker.
- Pour the heavy whipping cream and chicken broth over the chicken.
- Add the butter, Cajun seasoning, and garlic powder. Stir the liquid gently to distribute the seasonings.
- Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken reaches an internal temperature of 165°F.
- Transfer the chicken to a cutting board and shred it with two forks or cut it into large bite-size pieces.
- Return the chicken to the slow cooker and stir in the uncooked penne pasta.
- Cover and cook on high for 20 to 30 minutes, stirring once or twice, until the pasta becomes tender.
- Stir in the grated Parmesan cheese until it melts and the sauce evenly coats the pasta.
- Let the pasta rest uncovered for 5 minutes, then serve warm.
Notes
- For a milder dish, reduce the Cajun seasoning to 1 tablespoon.
- Check the pasta after 20 minutes because slow cookers heat at different rates.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- Refrigerate leftovers in an airtight container for up to 5 days.
- Add a splash of broth, milk, or cream when reheating to loosen the sauce.
