Description

Comforting, creamy, and packed with flavor, this slow cooker twist on a classic chicken pot pie is perfect for busy nights. With tender chicken, mixed vegetables, and a golden biscuit topping, every bite feels like a warm hug.

Ingredients

Scale
  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 3 cups frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp poultry seasoning
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 can (16 oz) refrigerated biscuits or pie crust

Instructions

  • Prepare Ingredients: Dice the chicken and onion. Add to the crock pot. Layer frozen mixed vegetables on top.
  • Mix the Base: Pour in cream of chicken soup and chicken broth. Sprinkle with garlic powder, onion powder, poultry seasoning, salt, and pepper. Stir gently to combine.
  • Cook the Filling: Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and fully cooked.
  • Add the Topping: Arrange the biscuits on top of the filling. If using pie crust, unroll and place it over the filling, trimming edges as needed. Make small slits for steam to escape.
  • Final Cook: Cover and cook on high for 30-45 minutes until the biscuits are golden brown or the pie crust is crispy. For extra-crispy biscuits, bake them separately in the oven, then add on top before serving.
  • Serve: Scoop into bowls and enjoy this creamy, comforting dish with your favorite sides.

Notes

  • Prevent Watery Filling: To avoid a watery texture, use less broth or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking.
  • Biscuit Texture: For a crispier topping, bake the biscuits separately in the oven and place them on top of the filling just before serving.
  • Flavor Boost: Add fresh herbs like thyme or parsley for an extra burst of flavor, and consider a splash of heavy cream or a sprinkle of shredded cheese for added richness.
  • Prep Time: 15 min
  • Cook Time: 6 hours (low) or 3 hours (high) + 45 minutes for topping
