Description

Crock Pot Creamy Cajun Chicken Pasta is a spicy, creamy, and comforting slow cooker dinner that blends bold Cajun flavours with tender chicken and perfectly cooked pasta. This no-fuss recipe delivers restaurant-worthy flavour with minimal effort, making it an ideal weeknight favorite for the whole family.

  • 450 g (1 lb) boneless, skinless chicken breasts

  • 1 bell pepper, sliced

  • 1 small onion, chopped

  • 3 garlic cloves, minced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp Cajun seasoning

  • 1/2 tsp smoked paprika

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 can (411 g / 14.5 oz) diced tomatoes with juices

  • 240 ml (1 cup) chicken broth

  • 225 g (8 oz) penne pasta

  • 120 ml (1/2 cup) heavy cream

  • 50 g (1/2 cup) grated Parmesan cheese

  • 2 tbsp olive oil

  • Fresh parsley, chopped, for garnish


Instructions

  • Heat olive oil in a skillet over medium heat. Sear chicken breasts for 2 minutes per side.

  • Transfer seared chicken to crock pot. Add bell pepper, onion, garlic, diced tomatoes, chicken broth, and seasonings.

  • Cover and cook on low for 4 hours or high for 2.5 hours, until chicken is tender.

  • Remove chicken, shred or slice, and return it to the pot.

  • Stir in uncooked penne pasta. Cover and cook on high for 25–30 minutes, until pasta is al dente.

  • Add heavy cream and Parmesan cheese. Stir until creamy and smooth.

  • Serve hot, garnished with chopped parsley.

Notes

Penne holds up well during crock pot cooking—avoid delicate pastas.

Adjust spice level with more Cajun seasoning or cayenne pepper.

Add spinach or sun-dried tomatoes in the last 10 minutes for variety.

Don’t freeze this dish; cream-based sauces may separate after thawing.
