Ingredients
2 lbs chicken breasts
2 cups heavy whipping cream
4 cups chicken broth
4 tbsp butter
2 tbsp Cajun seasoning
½ tsp garlic powder
1 lb penne pasta
1 cup grated Parmesan cheese
Extra Parmesan or parsley, for garnish (optional)
Instructions
Load the crock pot: Add chicken, cream, broth, butter, Cajun seasoning, and garlic powder to a 6-quart slow cooker.
Cook the chicken: Cover and cook on low for 4–6 hours (or high for 2–3 hours) until chicken reaches 165°F.
Shred chicken: Remove chicken, shred or dice, and set aside.
Make sauce: Whisk the slow cooker mixture until smooth, then return chicken to the pot.
Add pasta: Stir in uncooked penne. Cover and cook on high for 20–30 minutes, until pasta is tender.
Finish with cheese: Stir in Parmesan. Cover for 5 minutes, then mix well.
Serve: Top with extra Parmesan or parsley and enjoy hot.
