Ingredients
2 boneless, skinless chicken breasts (≈ 450 g / 1 lb)
1 can (400 g / 14 oz) diced tomatoes
2 cups (480 ml) chicken broth
1 cup (240 ml) heavy cream
½ cup (60 g) grated Parmesan cheese
1 cup (120 g) shredded mozzarella cheese
2 tsp (4 g) Italian seasoning
1 tsp (5 g) salt (adjust to taste)
½ tsp (2 g) freshly ground black pepper
1 tbsp (15 ml) olive oil (optional, for richness)
Instructions
Load the Crock Pot: Place chicken breasts in the crock pot. Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir.
Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
Shred the Chicken: Remove chicken, shred with two forks, and return to the pot.
Make it Creamy: Stir in heavy cream and Parmesan until smooth and creamy.
Finish with Mozzarella: Sprinkle mozzarella on top. Let it melt before serving.
