Description

Tender beef strips, colorful bell peppers, onions, and garlic slow cook in a savory sauce for an easy dump-and-go family dinner. Serve this Crock Pot Pepper Steak over rice, noodles, mashed potatoes, or baked potatoes for a hearty meal.


Ingredients

  • 2 pounds beef sirloin strips or sirloin steak, sliced
  • 3 large colorful bell peppers, sliced into thick strips
  • 1 large onion, sliced
  • 3 garlic cloves, peeled
  • 3/4 cup hot beef broth
  • 3 beef bouillon cubes
  • 1/4 cup soy sauce
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons honey
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch or all-purpose flour

Instructions

  1. Combine hot beef broth, bouillon cubes, soy sauce, Worcestershire sauce, honey, ground ginger, black pepper, salt, and cornstarch or flour in a mixing glass or bowl.
  2. Stir well and crush the bouillon cubes until the sauce is smooth.
  3. Place the beef strips into the bottom of the slow cooker.
  4. Pour the prepared sauce evenly over the beef.
  5. Add the sliced bell peppers, sliced onion, and garlic cloves on top.
  6. Cover and cook on LOW for 6 hours or HIGH for 3 hours.
  7. Stir the ingredients halfway through cooking if possible.
  8. When finished, stir well so the sauce coats the beef and vegetables evenly.
  9. Transfer to a serving dish and serve over rice, noodles, mashed potatoes, or baked potatoes.

Notes

  1. For crisper peppers, add them during the final 30 to 60 minutes of cooking.
  2. To make this a full one-pot dinner, add 1 cup uncooked rice and 2 cups water or broth during the final 2 hours of cooking on LOW.
  3. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  4. Freeze leftovers in freezer-safe containers for up to 3 months.
  5. Reheat in the microwave, oven, or a saucepan over medium-low heat with a splash of broth if needed.
