  • 4 medium Russet or Yukon Gold potatoes, thinly sliced
  • 1 cup sliced onions

  • 2 cups shredded provolone cheese (or mozzarella/provolone mix)
  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

  • 1 cup sliced mushrooms
  • 1 tbsp Worcestershire sauce

Instructions

  • Prepare the Ingredients:
    • Season the steak or ground beef with salt, pepper, and garlic powder. If using ground beef, brown it lightly in a skillet.
    • Slice potatoes into ¼-inch rounds and rinse in cold water to remove excess starch. Slice onions and bell peppers thinly for even cooking.
  • Layer the Ingredients:
    • Grease the crockpot with cooking spray or butter.
    • Place a layer of potato slices on the bottom. Sprinkle lightly with paprika and a pinch of salt.
    • Add a layer of beef, followed by onions and bell peppers.
    • Sprinkle a generous handful of shredded cheese over the veggies.
  • Repeat and Add Broth:
    • Continue layering potatoes, beef, veggies, and cheese until all ingredients are used. Finish with a cheese layer on top.
    • Pour beef broth evenly over the casserole.
  • Cook:
    • Cover and cook on low for 6-8 hours or high for 3-4 hours. Avoid lifting the lid during cooking to maintain heat.
    • In the final 30 minutes, add a layer of cheese on top and allow it to melt until bubbly.
  • Serve:
    • Scoop generous portions and garnish with fresh parsley or green onions for a pop of color.
