Description
Crockpot Cheesy Chicken Spaghetti combines tender shredded chicken, creamy soups, tomatoes with green chiles, cream cheese, cheddar, and spaghetti for an easy family dinner.

- 3 boneless, skinless chicken breasts
- 1 can diced tomatoes with green chiles, 10 ounces, undrained
- 1 can cream of chicken soup, about 10.5 ounces
- 1 can cream of mushroom soup, about 10.5 ounces
- 1/2 medium onion, diced
- 2 teaspoons minced garlic
- 2 teaspoons Italian seasoning
- 4 ounces cream cheese, diced
- 2 cups shredded cheddar cheese
- 1 package spaghetti, 16 ounces
- Salt and black pepper, to taste
- Chopped parsley or extra cheddar, optional for serving
Instructions
- Place the chicken breasts in the bottom of a six-quart crock pot.
- Add the undrained tomatoes with green chiles, cream of chicken soup, cream of mushroom soup, diced onion, minced garlic, and Italian seasoning.
- Stir the sauce ingredients around the chicken and cover the crock pot.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken reaches 165°F and shreds easily.
- Remove the chicken, shred it with two forks, and return it to the crock pot.
- Add the diced cream cheese and shredded cheddar cheese.
- Cover and cook on low for 20 to 30 minutes, stirring once or twice, until the cheese melts and the sauce becomes smooth.
- Meanwhile, cook the spaghetti in salted water until al dente according to the package directions.
- Drain the spaghetti well and add it to the crock pot.
- Gently stir until the sauce coats the spaghetti.
- Taste, season with salt and black pepper if needed, and serve hot.
Notes
- Leave the diced tomatoes with green chiles undrained because their liquid adds flavor and moisture.
- For smoother melting, shred the cheddar from a block and cut the cream cheese into small cubes.
- Do not add uncooked spaghetti at the beginning because it may become soft or gummy.
- Refrigerate leftovers in an airtight container for up to 5 days.
- Add a splash of milk or chicken broth before reheating if the sauce becomes thick.
