Description

Perfect for parties or cozy nights, Crockpot Chicken Nachos are an easy, delicious crowd-pleaser. Juicy shredded chicken meets gooey cheese, crunchy chips, and your favorite toppings for a flavor-packed treat.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa (mild, medium, or spicy)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 3 cups shredded cheddar or Monterey Jack cheese
  • 1 bag tortilla chips
  • Optional toppings: sour cream, guacamole, diced jalapeños, sliced green onions, fresh cilantro

Instructions

  • Place chicken breasts in the Crockpot. Sprinkle taco seasoning evenly over the chicken. Pour salsa on top and spread to coat.
  • Cook on low for 4-6 hours or until the chicken is tender.
  • Remove chicken, shred with two forks, and return it to the Crockpot. Add black beans and corn, stirring to combine. Cook for an additional 15 minutes to heat through.
  • Preheat your oven’s broiler. On a large baking sheet, spread an even layer of tortilla chips. Top with the chicken mixture, spreading it evenly.
  • Sprinkle cheese generously over the top. Broil for 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with your favorite toppings like sour cream, guacamole, or fresh cilantro. Serve immediately.
