Description

A creamy, cheesy, and hearty slow-cooker meal perfect for busy weeknights or cozy weekends. This recipe combines tender chicken, rich sauce, and spaghetti for a comforting dish the whole family will love.

 


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 10 oz can cream of chicken soup
  • 10 oz can cream of mushroom soup
  • 10 oz can diced tomatoes with green chilies (e.g., Rotel)
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 12 oz spaghetti (cooked al dente)
  • Salt and pepper to taste
  • Optional: chopped bell peppers or mushrooms

Instructions

  • Prep the Chicken: Season the chicken with garlic powder, onion powder, salt, pepper, and Italian seasoning. Place it in the crockpot.
  • Add Liquids: Pour in cream of chicken and mushroom soups, diced tomatoes with their juices, and chicken broth. If using vegetables, add them now. Stir gently to combine.
  • Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
  • Shred the Chicken: Remove the chicken, shred it with two forks, and return it to the crockpot.
  • Cook the Pasta: While the chicken cooks, boil the spaghetti to al dente according to package instructions. Drain and set aside.
  • Combine: Add the cooked spaghetti and cheeses (reserve a little cheese for topping) to the crockpot. Stir well to coat the pasta in the creamy sauce.
  • Melt the Cheese: Sprinkle the remaining cheese on top. Cover and cook on low for another 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve: Garnish with fresh parsley or basil if desired. Serve hot and enjoy!

Notes

  • Cook Pasta Separately: Always cook the spaghetti separately to ensure it doesn’t become mushy. Add it to the crockpot after cooking to maintain its texture.
  • Avoid Overcooking Chicken: Check the chicken at the lower end of the cooking time to prevent it from drying out. Slow cookers can vary, so keep an eye on it.
  • Adjust Sauce Consistency: If the sauce is too thick, add a splash of chicken broth; if too thin, let it simmer uncovered for 15-20 minutes to thicken.
