Description

Tender chicken breasts, Yukon Gold potatoes, and baby carrots cook in a rich garlic herb butter sauce for an easy, complete crockpot dinner.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 pound fresh baby carrots
  • 1 pound Yukon Gold potatoes, cut into evenly sized wedges
  • 1/2 cup salted butter, melted
  • 3 tablespoons minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon kosher or table salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup chicken broth, optional
  • Chopped fresh parsley for serving, optional

Instructions

  1. Pat the chicken breasts dry and trim away any visible fat.
  2. Wash the baby carrots and scrub the Yukon Gold potatoes.
  3. Cut the potatoes into evenly sized wedges.
  4. Stir the melted butter, garlic, thyme, parsley, salt, and black pepper together in a bowl.
  5. Arrange the chicken breasts in a single layer across the bottom of the crockpot.
  6. Place the carrots and potato wedges over and around the chicken.
  7. Pour the garlic herb butter evenly over the chicken and vegetables.
  8. Pour the optional chicken broth around the inside edge of the crockpot.
  9. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  10. Check that the chicken reaches 165°F and that the vegetables feel fork-tender.
  11. Rest uncovered for 5 minutes, then spoon the cooking juices over each serving.

Notes

  1. Thaw the chicken completely before placing it in the slow cooker.
  2. Cut the potatoes into similar wedges so they cook evenly.
  3. Begin checking the chicken near the shorter cooking time to prevent dryness.
  4. Add green beans, zucchini, broccoli, or spinach only near the end of cooking.
  5. Store leftovers with some cooking liquid in an airtight container for up to 4 days.
