Ingredients

  • 2 lbs beef (flank steak, sirloin, or stew meat), thinly sliced
  • 3 bell peppers (red, green, yellow), sliced into strips
  • 1 medium onion, sliced
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnish

Instructions

  • Prepare the beef: Season the sliced beef with salt and pepper. Optional: Sear the beef in a skillet with a little oil for 2-3 minutes per side to enhance flavor.
  • Layer the ingredients: Place the beef in the bottom of the crockpot. Add the onions and bell peppers on top.
  • Mix the sauce: In a bowl, whisk together soy sauce, beef broth, tomato paste, brown sugar, garlic powder, and ginger. Pour the sauce evenly over the beef and vegetables.
  • Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the peppers are soft.
  • Thicken the sauce (optional): During the last 30 minutes, stir in the cornstarch slurry to thicken the sauce.
  • Serve: Stir everything gently and let the dish rest for 5 minutes. Serve over steamed rice, mashed potatoes, or noodles. Garnish with sesame seeds and green onions for extra flavor.

  • Slice Beef Thinly: Thin slices of beef cook evenly and stay tender in the crockpot. If using tougher cuts, ensure they are sliced against the grain for maximum tenderness.
  • Layering is Key: Place the beef at the bottom of the crockpot and the vegetables on top. This arrangement ensures the meat absorbs the sauce’s flavors while the peppers and onions remain slightly crisp.
