- 1 lb ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 large potatoes, peeled and diced
- 3 large carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken or beef broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp paprika
- Salt and black pepper to taste
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 Tbsp cornstarch mixed with 2 Tbsp water (optional)
- Fresh parsley for garnish
- Extra cheddar cheese for garnish
Instructions
- Brown ground beef and drain fat.
- Sauté onion and garlic until fragrant.
- Add beef, vegetables, broth, and seasonings to crockpot.
- Cook on low 4–6 hours until vegetables are tender.
- Stir in cream, milk, and cheese until smooth.
- Thicken with cornstarch slurry if desired.
- Garnish and serve hot.
Notes
- Brown beef first for deeper flavor.
- Use freshly grated cheese for smooth melting.
- Stir dairy in at the end for best texture.
- Reheat gently to keep soup creamy.
