Ingredients

  • 4 cups chicken or beef broth

  • 1 tsp dried parsley
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 Tbsp cornstarch mixed with 2 Tbsp water (optional)
  • Fresh parsley for garnish
  • Extra cheddar cheese for garnish

Instructions

  1. Brown ground beef and drain fat.
  2. Sauté onion and garlic until fragrant.
  3. Add beef, vegetables, broth, and seasonings to crockpot.
  4. Cook on low 4–6 hours until vegetables are tender.
  5. Stir in cream, milk, and cheese until smooth.
  6. Thicken with cornstarch slurry if desired.
  7. Garnish and serve hot.

Notes

  1. Brown beef first for deeper flavor.
  2. Use freshly grated cheese for smooth melting.
  3. Stir dairy in at the end for best texture.
