Crockpot Queso Chicken Tacos made with only four ingredients. Chicken slow-cooked in taco seasoning, diced tomatoes with green chiles, and creamy Mexican cheese dip for an easy cheesy taco filling.

- 2 pounds boneless skinless chicken breasts
- 1 (1-oz) package taco seasoning
- 1 (10-oz) can Rotel diced tomatoes and green chilies
- 1 1/2 cups Mexican cheese dip
Instructions
- Place chicken in a 6-qt slow cooker
- Sprinkle taco seasoning over the chicken and top with diced tomatoes and green chilies
- Cover and cook on LOW for 4 to 6 hours
- Remove chicken from slow cooker and shred with two forks
- Return shredded chicken to the slow cooker
- Stir in the Mexican cheese dip until fully combined and creamy
- Serve in tortillas or taco shells with your favorite taco toppings
Notes
- If there is too much liquid in the slow cooker after cooking, drain some before adding queso
- Liquid amount may vary depending on the brand and size of chicken
- Adjust the amount of cheese dip to your preference
- Leftover chicken can be frozen for a quick meal later
