Description

Crockpot Queso Chicken Tacos made with only four ingredients. Chicken slow-cooked in taco seasoning, diced tomatoes with green chiles, and creamy Mexican cheese dip for an easy cheesy taco filling.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 (1-oz) package taco seasoning
  • 1 (10-oz) can Rotel diced tomatoes and green chilies
  • 1 1/2 cups Mexican cheese dip

Instructions

  1. Place chicken in a 6-qt slow cooker
  2. Sprinkle taco seasoning over the chicken and top with diced tomatoes and green chilies
  3. Cover and cook on LOW for 4 to 6 hours
  4. Remove chicken from slow cooker and shred with two forks
  5. Return shredded chicken to the slow cooker
  6. Stir in the Mexican cheese dip until fully combined and creamy
  7. Serve in tortillas or taco shells with your favorite taco toppings

Notes

  1. If there is too much liquid in the slow cooker after cooking, drain some before adding queso
  2. Liquid amount may vary depending on the brand and size of chicken
  3. Adjust the amount of cheese dip to your preference
  4. Leftover chicken can be frozen for a quick meal later
