Ingredients
2 lbs (900 g) chicken breast (about 4 pieces)
1 cup (240 ml) reduced sodium soy sauce
1/2 cup (120 ml) honey
1/4 cup (60 ml) hoisin sauce
1 tbsp (15 ml) rice vinegar
1 tbsp (15 ml) toasted sesame oil
6–8 garlic cloves, grated
2 scallions, sliced
1 tsp (3 g) sesame seeds
1/4 tsp (1 g) salt, or to taste
1/4 tsp (1 g) black pepper, or to taste
Instructions
Grate garlic and set aside.
Place chicken breasts into crockpot.
Add soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, garlic, salt, and pepper. Stir to coat chicken.
Cover and cook on high for 3–4 hours or low for 6–7 hours. Flip chicken halfway through if possible.
Once cooked, shred chicken with two forks or a hand mixer.
Return shredded chicken to crockpot and mix with sauce.
Serve over rice, garnished with scallions and sesame seeds.
Notes
Use chicken thighs for a richer flavor.
Add broth for more sauce or thicken with a cornstarch slurry.
Makes great leftovers—flavors deepen after a day.
Serve in lettuce wraps for a low-carb option or pair with jasmine rice and veggies.
