Description

Soft and buttery cornbread cookies topped with honey frosting, inspired by Crumbl.


Ingredients

Scale
  • 1 cup salted butter
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ¾ cup yellow cornmeal
  • 1 tablespoon honey
  • 2 teaspoons baking powder
  • ½ cup butter (frosting)
  • 2 cups powdered sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Heavy cream or milk as needed

Instructions

  1. Cream butter and sugars until fluffy
  2. Add eggs, vanilla, and honey
  3. Mix dry ingredients separately and combine
  4. Chill dough 10-15 minutes
  5. Shape into balls and flatten
  6. Bake at 350°F for 14 minutes
  7. Prepare frosting and spread on cooled cookies
  8. Drizzle honey on top
