Ingredients
2 English cucumbers, very thinly sliced
½ large red onion, very thinly sliced
¼ cup (60 ml) white wine vinegar
1 tbsp (15 ml) honey or agave nectar
1 tsp sea salt
2 tbsp chopped fresh dill
Chopped fresh chives (optional), for garnish
Freshly ground black pepper, to taste
Instructions
In a large bowl, combine sliced cucumbers and red onion.
Add white wine vinegar, honey or agave, and sea salt. Toss to coat evenly.
Cover and chill for at least 20 minutes to let flavors meld and cucumbers crisp.
Drain any excess liquid before transferring to a serving bowl.
Sprinkle with chopped dill and optional chives.
Season with black pepper and serve immediately.
