Description

Creamy Custard Peach Pie made with juicy peaches, Greek yogurt custard, and a buttery streusel topping.


Ingredients

  • 1 single pie crust pastry
  • 5 medium peaches, peeled and sliced
  • 1 cup Greek yogurt
  • 3 large egg yolks
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 cup butter
  • 1/3 cup all-purpose flour
  • 1/8 cup granulated sugar

Instructions

  1. Preheat oven to 425°F and prepare the pie crust in a 9-inch pie plate.
  2. Arrange sliced peaches evenly inside the crust.
  3. Whisk together Greek yogurt, egg yolks, sugar, flour, and vanilla until smooth.
  4. Pour the custard mixture over the peaches.
  5. Bake for 30 minutes.
  6. Mix butter, flour, and sugar until crumbly for the streusel topping.
  7. Sprinkle streusel over the pie.
  8. Bake for another 15 minutes until golden and set.
  9. Cool on a wire rack for at least one hour before serving.

Notes

  1. Fresh, frozen, or canned peaches all work in this recipe.
  2. Drain canned peaches and thaw frozen peaches completely before using.
  3. Store leftovers in the refrigerator for up to 4 days.
