- 5 medium peaches, peeled and sliced
- 1 cup Greek yogurt
- 3 large egg yolks
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 cup butter
- 1/3 cup all-purpose flour
- 1/8 cup granulated sugar
Instructions
- Preheat oven to 425°F and prepare the pie crust in a 9-inch pie plate.
- Arrange sliced peaches evenly inside the crust.
- Whisk together Greek yogurt, egg yolks, sugar, flour, and vanilla until smooth.
- Pour the custard mixture over the peaches.
- Bake for 30 minutes.
- Mix butter, flour, and sugar until crumbly for the streusel topping.
- Sprinkle streusel over the pie.
- Bake for another 15 minutes until golden and set.
- Cool on a wire rack for at least one hour before serving.
Notes
- Fresh, frozen, or canned peaches all work in this recipe.
- Drain canned peaches and thaw frozen peaches completely before using.
- Store leftovers in the refrigerator for up to 4 days.
