  • 3 ripe bananas, mashed

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • ½ cup brown sugar

  • 1 stick (½ cup) butter, softened

  • 2 large eggs

  • 1 ½ teaspoons baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup buttermilk

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans (toasted)

  • For Caramel Sauce:

    • 1 cup granulated sugar

    • ½ cup unsalted butter

    • ½ cup heavy cream

    • Pinch of salt

  • Optional: Chocolate chips, cinnamon, or coconut flakes for variations


Instructions

  • Prepare the Cake Base:
    Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
    Mash the ripe bananas and set aside.
    In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy.
    Add eggs one at a time, mixing well after each addition.
    Stir in mashed bananas and vanilla extract.
    In another bowl, whisk together flour, baking powder, baking soda, and salt.
    Gradually add dry ingredients to the wet mixture, alternating with buttermilk.
    Gently fold in the chopped pecans.
    Pour the batter evenly into prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
    Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

  • Make the Caramel Sauce:
    In a saucepan, heat sugar over medium heat until it melts into a golden caramel.
    Stir in butter and continue cooking for 2 minutes.
    Add heavy cream and salt, stirring until smooth.
    Remove from heat and allow it to cool slightly.

  • Assemble the Cake:
    Place one cooled cake layer on a cake stand or plate.
    Drizzle a little caramel sauce over the cake layer.
    Add the second cake layer on top.
    Pour the remaining caramel sauce over the entire cake.
    Garnish with additional pecans.

Notes

For a richer flavor, use dark brown sugar in the cake batter.

You can add chocolate chips or coconut flakes to the batter for extra flavor.

Let the cake cool completely before cutting to help the caramel set.
