  • 24 Oreo cookies, crushed

  • 5 tbsp unsalted butter, melted

For the Red Velvet Cheesecake:

  • 24 oz (3 packages) cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 cup sour cream

  • 1 tsp vanilla extract

  • 1 tbsp cocoa powder

  • 2 tsp red food coloring

  • 1 tbsp white vinegar

  • 1/2 cup buttermilk

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

For Garnish:

  • Crushed Oreos

  • Red velvet cake crumbs (optional)


Instructions

  • Prepare the Oreo Crust:

    • Preheat oven to 325°F (163°C).

    • Mix crushed Oreos with melted butter and press into the bottom of a 9-inch springform pan.

    • Bake for 10 minutes, then set aside to cool.

  • Make the Cheesecake Filling:

    • In a large bowl, beat the cream cheese and sugar until smooth.

    • Add eggs one at a time, mixing after each addition.

    • Stir in sour cream, vanilla, cocoa powder, red food coloring, vinegar, and buttermilk until well combined.

  • Bake the Cheesecake:

    • Pour the filling over the Oreo crust and smooth the top.

    • Wrap the bottom of the springform pan with aluminum foil and place it in a larger baking dish. Fill the outer dish with hot water halfway up the sides (water bath method).

  • Prepare the Cream Cheese Frosting:

    • Beat the cream cheese and butter together until creamy.

    • Add powdered sugar and vanilla extract, mixing until smooth.

  • Assemble and Serve:

    • Spread the frosting evenly over the chilled cheesecake.

    • Garnish with crushed Oreos and red velvet cake crumbs if desired.
