Description

Deviled Egg Pasta Salad tastes just like classic deviled eggs with pasta, pickles, and a creamy dressing.


Ingredients

Scale
  • 8 ounces small pasta (elbows or ditalini)
  • 3/4 cup mayonnaise
  • 1 tablespoon pickle juice
  • 1 tablespoon Dijon mustard
  • 6 hard-boiled eggs, diced
  • 1/2 cup red onion, chopped
  • 1/3 cup chopped pickles
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Green onions, sliced, for serving

Instructions

  1. Cook pasta according to package directions, drain, rinse with cold water, and transfer to a large bowl.
  2. Add mayonnaise, pickle juice, and Dijon mustard to the pasta and stir to coat.
  3. Fold in eggs, red onion, pickles, garlic powder, paprika, salt, and pepper.
  4. Cover and chill until ready to serve.
  5. Garnish with paprika and sliced green onions before serving.

Notes

  1. Chill at least 30 minutes before serving for best flavor.
  2. Stir before serving and adjust seasoning if needed.
