Ingredients
For the Crust:
1 cup graham cracker crumbs (or digestive biscuit crumbs)
3 tablespoons melted butter
1 tablespoon sugar (optional)
For the Cheesecake Filling:
8 oz (225g) cream cheese, softened
¼ cup powdered sugar (or to taste)
1 teaspoon vanilla extract
¾ cup heavy whipping cream, whipped to stiff peaks
Optional Add-Ins:
Food coloring (pastel shades for Easter)
Lemon zest or fruit puree for flavor variations
For Toppings:
Mini chocolate eggs
Whipped cream
Edible flowers

Instructions
Make the Crust:
Combine graham cracker crumbs, sugar, and melted butter.
Press the mixture into muffin tins lined with paper cups or use silicone molds.
Chill in the fridge for 10–15 minutes while preparing the filling.
2. Make the Filling:
Beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mix.
If using, divide and color the mixture with pastel food coloring.
3. Assemble the Cheesecakes:
Spoon or pipe the filling over the crusts. Smooth the tops.
Chill in the fridge for at least 2 hours, or overnight for best results.
For a quicker set, freeze for 30–45 minutes, then move to the fridge.
4. Decorate:
Top each cheesecake with whipped cream, candy eggs, sprinkles, fruit, or flowers.
Notes
Use full-fat cream cheese for best texture.
Customize with fruit puree or cocoa powder for flavor.
