- 2 large eggs, beaten
- 1 cup (150g) frozen peas and carrots
- ½ cup (75g) chopped onion
- 2 cloves garlic, minced
- 3 tbsp (45ml) soy sauce
- 1 tsp (5ml) sesame oil
- ½ tsp (2g) black pepper
- 2 tbsp (30ml) vegetable oil
- 2 green onions, sliced (for garnish)
Instructions
- Cook the Bacon: In a large pan over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving some bacon fat in the pan.
- Sauté the Vegetables: Add the onions and garlic to the bacon fat and sauté for 1-2 minutes until fragrant. Toss in the peas and carrots and cook for another 2 minutes.
- Scramble the Eggs: Push the veggies to one side of the pan. Pour the beaten eggs on the other side and scramble until fully cooked.
- Fry the Rice: Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce, sesame oil, and black pepper, stirring well to coat the rice evenly.
