  • 6 slices (170g) bacon, chopped
  • 4 cups (600g) cooked rice (preferably day-old)
  • 2 large eggs, beaten
  • 1 cup (150g) frozen peas and carrots
  • ½ cup (75g) chopped onion
  • 2 cloves garlic, minced
  • 3 tbsp (45ml) soy sauce
  • 1 tsp (5ml) sesame oil
  • ½ tsp (2g) black pepper
  • 2 tbsp (30ml) vegetable oil
  • 2 green onions, sliced (for garnish)

Instructions

  • Cook the Bacon: In a large pan over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving some bacon fat in the pan.
  • Sauté the Vegetables: Add the onions and garlic to the bacon fat and sauté for 1-2 minutes until fragrant. Toss in the peas and carrots and cook for another 2 minutes.
  • Scramble the Eggs: Push the veggies to one side of the pan. Pour the beaten eggs on the other side and scramble until fully cooked.
  • Fry the Rice: Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce, sesame oil, and black pepper, stirring well to coat the rice evenly.
  • Combine Everything: Mix in the crispy bacon and cook for another 2-3 minutes until everything is well combined and heated through.
  • Serve & Garnish: Remove from heat, garnish with sliced green onions, and enjoy!
