Description

A delicious taste of Mexican street food made easy with a slow cooker. These birria tacos feature tender, juicy beef, crispy tortillas, and a rich consommé for dipping, delivering bold and authentic flavors effortlessly.

 


Ingredients

  • 3 lbs beef chuck roast, cut into chunks
  • 3 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 2 dried pasilla chiles, stems and seeds removed
  • 4 cloves garlic
  • 1 large onion, quartered
  • 1 cinnamon stick
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 whole cloves
  • 2 tbsp apple cider vinegar
  • 4 cups beef broth
  • Corn tortillas
  • 1 cup shredded Oaxaca or mozzarella cheese
  • Chopped onions and cilantro for garnish
  • Lime wedges

Instructions

  • Prepare Chiles: Toast guajillo, ancho, and pasilla chiles in a dry pan over medium heat for 1-2 minutes until aromatic. Soak them in hot water for 15 minutes until softened.
  • Make Adobo Sauce: Blend soaked chiles with garlic, onion, cinnamon stick, cumin, oregano, cloves, apple cider vinegar, and 2 cups beef broth until smooth.
  • Sear Meat: Heat a pan over medium-high heat. Sear beef chunks on all sides until browned, about 4-5 minutes per side.
  • Slow Cook: Place seared beef in a slow cooker. Pour adobo sauce over the meat and add remaining beef broth. Cover and cook on low for 6-8 hours until the beef is tender and shreddable.
  • Shred Beef: Remove beef from the slow cooker, shred it with two forks, and return it to the consommé in the slow cooker to keep warm.
  • Prepare Tortillas: Dip each tortilla in the consommé, then heat them in a skillet over medium heat until slightly crispy.
  • Assemble Tacos: Add shredded cheese and beef to each tortilla. Fold in half and cook in the skillet until the cheese melts.
  • Serve: Serve tacos with a small bowl of consommé for dipping, and garnish with chopped onions, cilantro, and lime wedges.

Notes

1️⃣ Enhance the Consommé: For a deeper flavor, roast the onions and garlic before blending them into the adobo sauce. This adds a subtle sweetness and smoky complexity.

2️⃣ Crispier Tortillas: After dipping the tortillas in the consommé, ensure the skillet is hot to achieve a golden, crispy texture without making them soggy.

3️⃣ Custom Spice Level: Adjust the number of chiles or include a spicy chile like chipotle or chile de árbol for a heat boost, or remove seeds entirely for a milder version.
