Description

Blueberry pie in bar form with a buttery crumb crust, creamy filling, and juicy blueberries.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • Pinch of salt
  • 3/4 cup cold butter, cubed
  • 2 eggs
  • 1 cup sugar
  • 1/3 cup all-purpose flour
  • 1/2 cup sour cream
  • Pinch of salt
  • 3 cups fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch baking dish.
  2. Mix flour, sugar, salt, and butter until crumbly.
  3. Reserve 1 cup of mixture for topping.
  4. Press remaining mixture into baking dish.
  5. Bake crust for 10-12 minutes.
  6. Whisk eggs in a bowl.
  7. Add sugar, flour, sour cream, and salt.
  8. Fold in blueberries.
  9. Pour filling over crust.
  10. Sprinkle reserved crumb mixture on top.
  11. Bake for 1 hour until lightly browned.
  12. Cool 10 minutes before slicing.

Notes

  1. Do not overmix the crust mixture.
  2. Keep frozen blueberries frozen until use.
  3. Allow bars to cool before slicing for cleaner cuts.
