Easy Chicken Teriyaki made with a savory marinade and glossy glaze, perfect for a quick homemade meal better than takeout.
Ingredients

- ¾ lb chicken thighs or chicken breast
- 1 tablespoon vegetable oil
- 1 tablespoon toasted sesame seeds
- ⅓ cup low sodium soy sauce
- ⅓ cup mirin
- ⅓ cup sugar
- 1 teaspoon minced garlic or ginger (optional)
Instructions
- Flatten chicken to about ¾ inch thickness
- Place chicken in a bowl or bag
- Mix soy sauce, mirin, sugar, and optional garlic or ginger until dissolved
- Reserve half of marinade and pour remaining over chicken
- Marinate for at least 15 minutes or up to overnight
- Heat grill or pan over medium-high heat and add oil
- Remove chicken from marinade and wipe excess
- Cook chicken until golden brown, then flip
- Add reserved marinade during last 3 minutes to create glaze
- Cook until internal temperature reaches 165°F
- Alternatively bake at 400°F for about 20 minutes, brushing sauce in last 5–7 minutes
- Slice chicken and serve with sesame seeds and extra glaze
Notes
- Use chicken thighs or breasts depending on preference
- Substitute mirin with sake, white wine, or water with vinegar or lemon juice
- Substitute sugar with honey, agave, or brown sugar
- Watch carefully when baking as sugar can burn
- Add vegetables for stir fry variation or spice for heat
