Description

Easy Chow Mein brings crispy Cantonese-style egg noodles, fresh bean sprouts, green onions, and a sweet-savory soy sauce stir-fry sauce together in only 15 minutes.


Ingredients

  • 12 ounces thin fresh chow mein egg noodles, Hong Kong-style
  • 1/2 small yellow onion, thinly sliced
  • 5 stalks green onions, cut into 2-inch pieces, whites and greens divided
  • 2 cups bean sprouts
  • 3 tablespoons corn oil or another neutral oil
  • 1 teaspoon sesame oil, for finishing
  • 2 tablespoons dark soy sauce
  • 1 tablespoon regular soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon fish sauce
  • 1 tablespoon granulated sugar
  • 1 tablespoon water

Instructions

  1. Place the noodles in a large bowl, pour boiling water over them, and soak for 30 seconds to 1 minute until softened. Drain well and set aside.
  2. In a small bowl, mix the dark soy sauce, regular soy sauce, oyster sauce, fish sauce, sugar, and water until the sugar dissolves.
  3. Heat 1 tablespoon corn oil in a wok over medium-high heat. Add the yellow onion and white parts of the green onions, then stir-fry for 1 minute. Remove and set aside.
  4. Add 1 tablespoon corn oil to the wok and heat for about 2 minutes. Add the drained noodles and spread them into a thin layer. Cook for about 2 minutes until lightly crisp.
  5. Flip the noodles, drizzle the remaining 1 tablespoon oil around the edge of the wok, and cook for 2 more minutes.
  6. Add the cooked onions, green onion greens, bean sprouts, and sauce. Toss gently for 1 to 2 minutes until everything combines and the noodles look glossy.
  7. Remove from heat, add sesame oil, toss once more, and serve immediately.

Notes

  1. Use fresh Hong Kong-style egg noodles for the best crisp-tender texture.
  2. Drain the noodles and bean sprouts well so the wok stays hot.
  3. Let the noodles sit in the wok before tossing so they develop crispy edges.
  4. Add cooked chicken, shrimp, beef, pork, tofu, or char siu for a heartier meal.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days.
