Description
Tender mini cinnamon donut muffins flavored with vanilla and nutmeg, then dipped in melted butter and rolled in cinnamon sugar. They bake in 12 minutes and make an easy breakfast, brunch, snack, or dessert.

- Nonstick cooking spray or softened butter for greasing
- 1/4 cup unsalted butter, melted, for coating
- 1/2 cup granulated sugar, for coating
- 1/2 teaspoon ground cinnamon, for coating
Instructions
- Preheat the oven to 375°F and thoroughly grease 24 wells of a mini muffin pan.
- Cream 1/2 cup granulated sugar with 1/4 cup melted butter until smooth and evenly combined.
- Stir in the milk and vanilla extract.
- Add the all-purpose flour, baking powder, and nutmeg. Stir only until no dry streaks remain.
- Divide the batter among the prepared mini muffin wells, filling each well about halfway.
- Bake for 10 to 12 minutes, or until the tops spring back and a toothpick inserted into the center comes out clean.
- While the muffins bake, place 1/4 cup melted butter in a shallow bowl.
- Combine 1/2 cup granulated sugar and 1/2 teaspoon cinnamon in a separate shallow bowl.
- Let the baked muffins rest in the pan for 2 minutes, then carefully remove them.
- Dip each warm muffin lightly in melted butter, then roll it in the cinnamon-sugar mixture.
- Place the coated muffins on a wire rack and cool slightly before serving.
Notes
- Measure the flour by spooning it into the measuring cup and leveling the top.
- Do not overmix the batter, or the muffins may become firm.
- For a stronger cinnamon flavor, increase the coating cinnamon to 1 teaspoon.
- Coat the muffins while warm so the cinnamon sugar sticks evenly.
- Store cooled muffins in an airtight container at room temperature for up to 2 days.
- Freeze uncoated muffins for up to 2 months, then thaw, warm, and coat before serving.
